Foodie Friday - Tasty Recipe...can your kids cook?

I am thinking to do this post a little different than usual!
Today was a very productive day and during the day of course I cook meals for the family. I love cooking with my children. It is actually a highlight to my day!
Since they were babies I have always had them partake in cooking. Of course when they were babies they would sit on the counter and help stir! As they have grown their duties grew. They began measuring and stirring. Then they began to cook on the stove. Well reading recipes with me standing by to help was the next step. Now I can just step back and they can cook the meal pretty much on their own.
To be honest sometimes I miss doing all the cooking. It is my thing! But I know that I want to prepare them for life and I don't want them to always eat out or microwave a dinner!!
My daughter can literally cook breakfast and plan the meal out whether it be tofu with potatoes, pancakes or biscuits. The list goes on actually and she is only eleven. I am sure she will surpass my cooking ability and she has already surpassed my baking abilities!!
Today we (the kids) made stuffed shells. My children and I are vegan and my husband is not. So in our house we make two variations of our meals. My son made my husband's shells and my daughter made ours!! They were delicious 😋! I wanted to leave you with the vegan stuffed shells recipe and hope you are able to try them out and see what you think! Eating to the Glory of God never tasted so good!!
Vegan stuffed shells
1 box stuffed shells
Cook and place in cool water
Filling: tofu/cashew ricotta
Blend together in blender or food processor:
1 cup soaked cashews
1 package firm tofu
1 yellow pepper
1/2 TBS onion powder
1/2 TBS garlic powder
1/2 tsp black Himalayan salt or pink Himalayan salt
Optional: 2 cups spinach and 1/2 an onion
Cashew cheese:
Blend in blender or food processor
2 cups soaked cashews
1 red pepper
1/2 TBS onion powder
1/2 TBS garlic powder
1/2 tsp pink Himalayan salt
Line a casserole dish with marinara sauce then stuff shells with tofu/cashew ricotta and place in dish until filled then cover first layer with marinara and cashew cheese then add another layer of shells until complete! Cover with aluminum foil and Bake in the oven at 350 degrees for 40 minutes!
Let cool and Enjoy!!
